This month's highlights...
With the
excitement of learning about the new clay pot still fresh on my mind,
this month's article is a brief introduction to this time honored
kitchen utensil and the numerous benefits of using it. Believe me,
once you do use it, you quickly realize that the clay pot is for more than
just gardening!
This month's recipe was my first attempt at cooking
with the clay pot, and the meal was absolutely amazing. The chicken
was moist and tender, and the flavors of all the herbs, vegetables, and
chicken really combined to create a delicious and easy one-dish dinner.

full of some great sentiments to help you kick off the New Year and keep

Happy New
Year!!
Welcome to 2007 and we hope you had a great
holiday season. I know I spoke last month about limiting the number of
bad foods we kept in the house over the holiday, and for the most part we
did. But, it seems that was a trend that most of our friends and
family didn't keep when it came to the holiday treats. Amy will tell
you that my biggest weakness is chocolate and that I have absolutely no
willpower when it comes to saying no to it. So despite trying, I
succumbed to the temptations everywhere and put on a few more than my fair
share of pounds. So right along with the start of 2007 comes the start of
my very own personal battle of the bulge. I have to admit, I like the
way Jay Leno thinks when it comes to weight gain - "There are more
overweight people in America than average-weight people. So overweight
people are now average, which means you have met your New Year's
resolution."
On a less "heavy" note, after much begging and
many perfectly directed hints, I received my first Romertopf clay pot as a
gift this last Christmas. Amy couldn't have given me a better gift
because I truly love to explore the techniques of age-old cooking methods,
and armed with my new Romertopf #113 I am ready to begin. As you'll
see by the theme throughout this newsletter, I have been doing my homework
on this great item and clay pot cooking has been around for centuries for
good reason. Different versions of this utensil can be found in kitchens
all over the world under a variety of names, and I can't believe some of the
great ideas used by ancient and modern man to really put this simple piece
of pottery to use. I plan on trying just about every one of them,
starting with my next attempt on New Years Day - clay pot bread.

pot cooking is by no means a new technique or the latest gadget, but one
that has been a kitchen staple for many cultures stretching back long before
Roman times. Depending on the culture you are most familiar with, this
simple kitchen utensil may have been called a tagine, cazuela, tian, donabe,
or terra cotta. But regardless of what it is called, this time honored
tradition of creating a one dish meal by steaming your meats and vegetables
can not be denied its place in kitchen history and necessity.
Similar in concept to the modern crock pot, the process is incredibly

Clay Pot
Roasted Chicken and Vegetables
Ingredients
For the chicken:
1 frying chicken, sized to fit your clay pot
1/2 medium onion, sliced into eighths
1 bunch oregano
1 bunch tarragon
2 cloves garlic
1/2 medium lemon, halved
2 tbsp. butter, softened
1 tbsp. Amazing Pork and Poultry Blend
For the Vegetables:
1/2 potato per person, quartered
3 - 5 medium carrots per person, peeled and sliced into sticks
4 - 6 sugar peas or green beans per person
1 portebellini mushroom per person, quartered
2 - 3 baby corn ears per person
1 red bell pepper - sliced into strips...
