IN THIS ISSUE:

FROM OUR EDITOR'S DESK

Hello!

May is here, and we are just about to start the Ottawa Tulip Festival, which is an absolutely beautiful sight to behold. Virtually every garden throughout the city is covered with delicate blossoms in a palate of colors that would boggle the mind of even Picasso or Britto.

The Canadian Tulip Festival is the largest tulip festival in the world, and it all started in 1945 with a gift from Princess Juliana of the Netherlands. After the Second World War ended, she presented Ottawa with 100,000 tulip bulbs to show her and her country’s appreciation for the efforts of the soldiers who worked to liberate Holland, and for the safe haven which Holland's royal family received while in exile in Canada. Throughout WWII, the Dutch royal family was hosted at Government House in Ottawa, and Princess Margriet was born at our very own Ottawa Civic Hospital.

All the blooms remind me of the bluebonnets and Indian paintbrushes that would line the roadsides and fields along the Texas highways with vast blankets of blue and red. It always made for an exquisite background for parents wanting to take the perfect picture of their small children. Of course, this was much to the chagrin of the Texas Department of Highways who preferred it when people didn’t run through the flowers. We used to joke that they put the fire ants and snakes amidst all of the flowers just to keep the people out!

What's in this month's issue...

Moving from the flair of the scenery to the flare of the flame, this month's article is all about barbecue mops. We often read or hear about them on barbecue forums and discussions, and we have all seen them in use on our favorite outdoor cooking shows, but unfortunately not too terribly many home cooks use them. Mops are a great way to add flavor and moisture to your favorite meats, and the best thing about them is they don’t burn like a sauce!

Once you’ve soaked up everything you could want to know about mops and how to use them, our monthly recipe section is going to provide you with a few simple and flavorful recipes for mops that you can make at home.

Just when you thought you already knew everything you needed to know! We recently received a request for more information about zucchini, so this month’s “Did You Know” is all about the courgette (or zucchini as most of us know it). As always, we’ll also throw in some great ideas for what to do with them.

NEWS FROM THE WORLD OF FOOD

Take a Mop to Your Meats!
by
Joe Johnson

Mops, sometimes referred to as sops or bastes, are liquids that are applied to meats during the slow cooking process of traditional barbecue, to keep the meats moist and add additional flavors to accent your meat dish. Many traditionalists and competitive barbecue teams swear by their mops almost as much as they do their dry rubs. They get their unusual name from the tool that resembles a small kitchen mop used to apply the flavor baste...

OUR FEATURED RECIPE

Our Favorite BBQ Mops

We believe in keeping things simple when it comes to great barbecue, so the directions for most of these mops are the same: Put all ingredients in a pot and bring to boil. Lower heat to simmer, and keep warm. It really doesn't get any easier than that when it comes to protecting the moisture of your meat and adding whole new dimensions of flavor! Be sure to try our Apple Cider mop for your next ribs, or our Jack Daniels mop on your next brisket. You won't be disappointed...

DID YOU KNOW?

VEGGIES 101 - THE ZUCCHINI

Italian for "small gourd”, zucchini have become as common a staple to the North American household as carrots or corn. Especially loved by gardeners for their simple growing requirements and their abundant harvest, zucchini are a versatile food that is good for your waistline, heart, and taste buds!

Description
Members of the Cucurbitaceae family (like other squash), zucchini is typically long and cylindrical and has a thin freckled skin. But, fruit from this member of the Italian marrow squash can also be found in round and other odd shapes. Zucchini is often grown for its yellow flowers, used before they develop fruit...
