Hello!

I love the spring. As the winter starts to head out, I find myself getting excited by the simplest of things; a few more minutes of sunlight each day, the bits of grass starting to peek through the melting snow, and the sounds of birds announcing their return, are but just a few of those joys.

In all honesty though, one of my absolute favorite things about spring is the barbecue aisle at The Home Depot. I love that store, especially when they bring out the newest models of grills and accessories. Unfortunately, I find I have little or no control over my “I really need this shiny new gadget” impulse when it comes to the barbecue and smoker, and believe me, I can always find a reason to justify any accessory. I have an agreement with my wife Amy that when I go to the Home Depot during the spring grill rollout, I have to leave my cash, credit, and bank cards behind, and I can’t take advantage of any no-pay, no-interest, immediate credit deals. She knows firsthand the damage I can do when I am on that aisle, alone and with accessibility to funds of any kind! Hopefully someday soon my investments in the lottery will pay off so I can fulfill my need for the ultimate, dream barbecue setup. Truth be known, my yard isn’t big enough to hold that dream!

But, if I did have an unlimited budget, first thing for me would be a smoker shaped like a giant chile pepper, designed by Austin National Smokers. Remember, I said I had an endless budget. I never said anything about having good taste.

Next, I would be at Corbeil Appliances - they are kind of like the Neiman-Marcus of appliances around here. First on my list is the Sub-Zero refrigerator and freezer, as well as their wine and beer fridge, a couple of built in big green eggs (for those days I just don't want to fire up my chile pepper), Miele dishwasher, Viking stoves. Wow! I guess my wife shouldn't trust me alone in there either!

What's in this month's issue...

Our article of the month introduces you to the barbecue accessory we have all seen, but frequently ignore and toss aside – the rotisserie. All too often I hear barbecue fanatics claim that a rotisserie does nothing more for meat than just using a grill with a lid and rotating the meat yourself. Now we all know what they say about opinions, but in my honest opinion, they couldn’t be more wrong. The continuous and methodical slow rotation of the meat really does serve to create a perfectly even, crisp crust that seals in the moist, flavorful juices of whatever meat you choose. Additionally, the rotisserie serves to protect the meat from flare-ups and overcooking. We asked the experts at Hormel how to really use the rotisserie and they had some great advice for us to share.

Our recipe for March is a real crowd pleaser perfect for that spring garden party, and it lets you apply what you just learned from our article of the month - Rotisserie Leg of Lamb with a Honey Balsamic Glaze.

How to Get the Most Out of Your Rotisserie Attachment - From our friends at Hormel Meats

Providing a meat flavor unlike any other grilling method, rotisserie roasting is thought to be the oldest cooking technique known to man. Consisting of a spit, a means to rotate the spit and a heat source, rotisserie grilling continues to be a favorite way to grill foods.

Rotisserie roasting is commonly referred to as spit roasting. The term "spit" refers to a device consisting of one or more metal bars on which meat is skewered. After the meat has been skewered, two prongs (or "forks") are screwed tightly on each side of the meat to hold it in place. The spit (by hand or by a mechanical device) rotates constantly at a slow speed. This rotating motion ensures even cooking, and allows the meat to self baste with its own juices. The meat does not grill, it roasts as it cooks and absorbs a smoke flavor while developing a perfectly crisp crust. Most spits can be raised or lowered on the grill to control temperature...

Rotisserie Leg of Lamb with a Honey Balsamic Vinegar Glaze
 
1 leg of lamb, bone-in
1 cup + 1 tablespoon Balsamic vinegar (or ½ cup of high quality, thick syrup balsamic vinegar)
1/2 cup honey
6 cloves garlic
1 tablespoon Aussie Steak Rub
3 – 4 sprigs rosemary, stems discarded
1 tablespoon olive oil

Trim lamb leg of thick patches of excess fat, leaving a small layer to protect and baste the meat during cooking.

Place 1 cup balsamic vinegar in small saucepan and reduce to 1/2 cup over low heat, or until thick and syrupy. If already using a high quality thickened balsamic, simply warm over low heat. Add honey and incorporate well. Set aside to cool...
