Hello
and welcome!
With the start of July comes some exciting new changes here at Caroline's.
First and foremost, we are proud to announce the release of our newest seasoning blend - Caroline's Sweet Maple Rub! We received a lot of requests from our newsletter subscribers and customers seeking a sweeter rub that would go on ribs as well as salmon, with a full chile flavor that wouldn't burn off their taste buds. So we went back to the drawing board and began the process. After a long stretch of development and testing, we ended up creating this blend by merging the traditions of a Kansas City Style rub with the incredible maple products available in Canada. This rub was an absolute hit with our test groups, and I have to admit, it is quickly rising to the top of my favorites list.
This month, we also say so long for now to our Texas Beef and Game Rub. Over the last 5 years, it has been a top performer, but the other day I began to experiment with it by adding a couple of unique and unusual ingredients which we recently got our hands on, and they took the rub from excellent to superior. So we've taken it off the shelves, and have sent it back to the test kitchen to begin the process of creating a new and greatly improved Texas Beef and Game Rub. Look for its return in an upcoming newsletter!

This month's article is all about salmon. It is one of those items that even folks who don't like fish tend to enjoy. The two most frequently asked questions we encounter when talking about this fish are how do you pick a good salmon, and then how do you properly store it. This month we address those questions and give you some great tips to remember.
Our recipe for July is an excellent and super easy Maple Sweet Salmon Filet cooked on Cedar Planks, using our new Sweet Maple Rub. Quick, simple, and extremely flavorful, we know that this will become one of your family's favorites!

SALMON - TIPS FOR CHOOSING AND STORING YOUR CATCH OF THE DAY

Most people like salmon, even when they aren't big fans of other fish varieties. It's meaty texture, rich color, and great flavor make it an appealing substitute for the old standbys from the butcher. But, if you aren't familiar with the varieties and choices in species and cuts, it can be a bit daunting when trying to determine what it is you want or need, as well as how your choice will determine how you cook it, or how it will taste. This article will hopefully clear up some of the confusion and help you to make a better, more educated choice when buying your next salmon.

SUPER SIMPLE MAPLE SWEET SALMON FILETS COOKED ON CEDAR PLANKS
 No magic here - just pure and delicious maple sweetness! You'll be amazed by just how good this is, especially after you see how easy it was to make! Great thing is this recipe works on pork and chicken too!
What you need to get started:
2 Cedar planks, each large enough to hold two filets, with 1 inch of space between them - usually available from your grocer or fish store
4 salmon filets, approximately 6 - 8 ounces each, or about 1/2 inch thick
About one half hour before cooking, begin by soaking the cedar planks in water so they don't burn in the oven. Sprinkle one divided portion of the rub on each filet, and gently spread the rub across the fish to coat. If skinless, flip the fish and coat the second side as well. Place filets on a plate and cover with plastic wrap. Let sit in refrigerator until the cedar plank has finished soaking...

SMOKEY-T'S PIT CREW BBQ TEAM
 In this business, we get a lot of requests for sponsorship and donations. But when we first spoke with the Tom, Derek, and John from Smokey-T's Pit Crew, we knew they were onto something we had to be a part of. While new on the circuit at that time, they showed a passion and drive for barbecue that we knew would lead to a winning combination and a long relationship between Smokey-T's and Caroline's.
 Beginning in 2005, we started providing them with products for use at competitions and catering events, and in this short time, we have watched them grow into a solid and winning competitive team. They now have a number of victories under their belts, including receiving the Grand Champion title while participating at the King of the Grill BBQ Championship in New Jersey.
