Holidays!!
The Christmas season is completely upon us now and with only a few weeks left until the big day, most of us are beginning to scramble around trying to find the perfect gifts for our loved ones. However, with the selection of gadgets and toys that have hit the shelves, I am sure it's going to be a challenge for all of us to remember that we are supposed to be shopping for others and not for ourselves.
As you are all well aware I love this time of year, but after all the excess eating that I participated in over the Thanksgiving holidays I have tucked a few more pounds under my shirt. So this year, Amy and I have decided to healthy-up our Christmas snacks by choosing to avoid making the traditional heavy butter, loaded with fat treats. I'm not going to lie to you, we will still have our fair share of the good stuff when we go to others homes for parties - I would never want to offend the host or hostess (that's my excuse and I'm sticking to it!!). But instead of having tons of goodies lying around the house throughout the entire holiday, we have chosen to re-work some of our old recipes to improve upon the good stuff and limit the waist bulging temptations sitting around. I learned a long time ago that when it comes to sweets and chocolates, I have absolutely no self control. Telling myself that I am not going to have anything fattening over the holidays is guaranteeing my failure, but by keeping healthier and still extremely flavorful snacks handy, I am far less likely to reach for those traditions that force me to buy a new belt.
So with my goal in mind, I am coming to you for help. If you have a recipe that is full of flavor and a favorite healthy alternative to the traditional holiday treats and snacks, we'd love to hear about it and give it a try in our test kitchen! What's in this month's issue...
This month's article takes a moment to look at a holiday tradition that you either love or you hate - the Christmas Fruitcake. It's been around for centuries and funny enough it is the most common item for re-gifting. Who knows but if you look deep into the dark recesses of your freezer, you may even have one stuffed back there waiting to be passed on to another generation!
An absolutely delicious alternative to the typical Christmas turkey, prime rib is the perfect entree for your Christmas table. This month's recipe is a personal favorite that will leave your holiday guests in awe of your culinary prowess! Try this slow roasted prime rib and you may never do a Christmas turkey again!
What Christmas newsletter would be complete without at least mentioning the Christmas tree? Very few things can compete with the aroma and sight of a freshly cut Christmas tree, but I think my favorite thing about the holiday tree is that no two are ever alike. couldn't possibly like you and yours very much? Well, if so, please read on for
an interesting look at the history of fruitcakes and what they want from all of
us.
Is there any
food product anywhere that is more ridiculed and parodied during the holiday
season than the poor old fruitcake? I once heard it said that there is really
only one floating around the entire world. It is hard and stale because over the
years it has been passed from person to person every holiday season since time
immemorial. No one can eat it or use it for anything other than a gift for
someone not liked, an alternate doorstop, brick or paperweight...

Slow Roasted Prime Rib with a Garlic Horseradish Glaze
Ingredients
1 6 pound well-trimmed boneless beef rib roast (Choice or Prime)
30 large garlic cloves, unpeeled
1/4 cup olive oil
1 tablespoon chopped fresh thyme leaves
1/3 cup prepared white cream-style horseradish
1/2 tablespoon Aussie Steak Dry Rub
12 sprigs fresh thyme
Directions
1. Preheat oven to 350°F.
2. Toss unpeeled garlic cloves and olive oil in small baking dish; cover. Bake until garlic begins to brown, about 30 – 35 minutes...

Chistmas Tree Traditions from Around the World
Canada
German settlers migrated to Canada from the United States in the 1700's. They brought with them many of the things associated with Christmas we cherish today: Advent calendars, gingerbread houses, cookies--and Christmas trees. When Queen Victoria’s German husband, Prince Albert, put up a Christmas tree at Windsor Castle in 1848, the Christmas tree became a tradition throughout England, the United States and Canada.
Mexico
In most Mexican homes the principal holiday adornment is el Nacimiento (Nativity scene). However, a decorated Christmas tree may be incorporated in the Nacimiento or set up elsewhere in the home. The typical arbolito (little tree) is often an artificial one, a bare branch cut from a copal tree (Bursera microphylla) or some type of shrub collected from the countryside...
