Happy Holiday's!
 
Christmas is just around the corner, and I haven't even begun to tackle my gift list for the year! I have to admit that I really enjoy going to the mall during the holidays and seeing the beautiful lights, trees and decorations. I especially enjoy how the anticipation glowing in everyone's faces simply screams gimme, gimme, gimme!
 
But I have to admit as well, that I am a bit phobic when it comes to the crowds, especially when the entire event begins with me and a hundred other people fighting over the one and only remaining parking space. Needless to say, the process leading up to the joy of Christmas morning can be, well, taxing to say the least.
 
We have been keeping the elves in our workship really busy filling orders for the holidays and preparing for their holiday break, but they have been especially busy preparing for our review in the Cooking Club of America's magazine, "Cooking Pleasures". We sent out nearly 1000 bags of our Amazing Pork and Poultry Blend to a sample group of their members for their reviews and comments. The results will be featured in their October 2006 issue, and of course, we will post them here as well. This is a really exciting opportunity for us, so we can hardly wait!
 
While I am thinking of clubs, I would like to extend a special hello and welcome to all our newest subscribers and customers from the National Home Gardening Club. We hope you enjoy the newsletter, and we are really excited about our new relationship with your club.

Since it is the holiday season, we thought our featured article should provide you with some hints for making your holiday a bit easier. Despite all the hype and thrill, this can be a stressful and emotionally testing season especially when you are having guests over. So, we have put together some tips to make your holiday dinner party an event to remember - happily remember that is.
 
This month, our test kitchen has put together a great recipe for Tequila-Marinated Chicken Enchiladas that will take away the chill of winter and put some warmth in your bones. You might be thinking "enchiladas during the holidays, have they gone crazy?!?!". But, believe me, there is nothing better than a warm, spicy dish to defrost your soul and spirit after shoveling out of a wet snow storm!
 
Speaking of wet snow, our Customer Spotlight introduces a couple of customers from the great white North, who are probably digging their way out of a snow bank right this very moment.

A Reduced-Stress Holiday Dinner - Is It Even Possible?

Planning a Christmas holiday dinner or for that matter, any large gathering really isn't as daunting as it may first appear, especially when you realize that the more thought and consideration you can give to the prep-work and the meal, the easier it will be. The key is to do as much work ahead of time as you can, so you and your guests can enjoy yourselves the day of the party.

To help you create a reduced-stress dinner, here are some great tips for making your next holiday function a memorable and enjoyable time.


OUR FEATURED RECIPE

Tequila Marinated Chicken Enchiladas

2 marinated, boneless, skinless chicken breasts
1 ounce Tequila
1 tablespoon corn oil
1 teaspoon salt
2 teaspoons Caroline's Texas Chili Seasoning, or more to taste

10 large corn tortillas
1 head of garlic, roasted
1 large red bell pepper, roasted
3 Jalapenos...

1 hour prior to cooking, marinate the chicken breasts in the tequila, corn oil, salt, and Texas Chili Seasoning. Barbecue or broil the chicken breasts, let cool and shred or slice into julienne size pieces. Slice roasted peppers into julienne size pieces. Pinch roasted garlic from cloves and set aside...

CUSTOMER SPOTLIGHT
Our featured customers this month are Ben and Sandra from Gloucester, Canada, where they both work with the Royal Canadian Mounted Police. Ben is an avid fan of the grill, so when those cold, hard winter months make grilling a non-option, Ben loves to season with our Hickory Smoked Sea Salt and Texas Beef and Game Rub.
 
Ben tells us that his and Sandra's favorite side for a nice thick steak is to take some French fries from the freezer, sprinkle them with our Texas Beef and Game Rub, and then throw them in the oven. Once they are cooked and crispy, he pulls them from the oven and sprinkles a bit of the Hickory Smoked Sea Salt on the fries and his steak. He tells us it is "just like a breath of summer in the middle of winter and a perfect accompaniment to the steak!"
 
Thank you Ben and Sandra, and we'll go one better than usual this month - instead of just a bag of Smoked Salt, we'll throw in a bag of the Texas Beef and Game Rub as well!
